Healthy Broccoli Soup Recipe for Weight Loss
Introduction
Ingredients
- 2 cups fresh Broccoli Florets
- 1 medium Onion, chopped
- 2 Garlic cloves, minced
- 1 medium Carrot, chopped
- 1 Celery stalk, chopped
- 4 cups Vegetable Broth (low-sodium)
- 1 cup Low-Fat Milk (or plant-based milk for a vegan option)
- 1 tablespoon Olive Oil
- Salt and Pepper to taste
- Fresh Parsley for garnish
Directions
1. In a large pot, heat the olive oil over medium heat. Add the chopped onions and minced garlic, sautéing until they become translucent and fragrant.
Add the chopped carrots and celery to the pot, continuing to cook for an additional 3-4 minutes.
2.Next, add the fresh broccoli florets to the pot and stir everything together. Let the vegetables cook for about 5 minutes until they start to soften.
Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat to low, cover the pot, and let the soup simmer for approximately 15-20 minutes, or until the vegetables are tender.
Once the vegetables are fully cooked, use an immersion blender to puree the soup until smooth and creamy. If you don't have an immersion blender, you can carefully transfer the soup in batches to a regular blender to puree it.
After blending, return the soup to the pot and stir in the low-fat milk (or plant-based milk) to add a creamy consistency. Season with salt and pepper according to your taste preferences.
Reheat the soup gently on low heat, making sure not to boil it again.
Ladle the healthy broccoli soup into bowls, garnish with fresh parsley, and serve hot.
